Roberto Soldado had the chance to make it two in the early stages of the second half, but his penalty was saved by Dani Hernandez.
Valladolid had their equaliser after 71 minutes when Oscar Gonzalez whipped a powerful effort into the top corner. There was time for late drama, however, with Jonas heading home in the final minute to hand Valencia the three points.
